Asparagus

Asparagus is such a fabulous springtime veggie.

Its natural bright flavor and vibrant green color just screams, “Hi! I’m so fresh!”

Unfortunately, way too often, asparagus turns out mushy when its cooked. When prepared properly, asparagus should have a nice crunch on the outside, while staying tender on the inside. The best way I’ve found to get that perfect balance is by roasting those spears!

Conveniently, I also think its easiest way too ;)

When I roast asparagus, I like to add a little lemon juice and garlic to accentuate the crisp flavor and texture. Its amazing. An absolutely delightful side dish to any meal.

I even serve it at BRUNCH!

Asparagus

LEMON GARLIC ROASTED ASPARAGUS

1 pound of asparagus, rinsed & ends trimmed off

1 tablespoon olive oil

juice of half a lemon

1 1/2 teaspoons garlic powder

salt & pepper

Preheat oven to 425. Line a baking sheet with non stick foil.

Toss asparagus with olive oil, lemon juice, garlic powder, salt, and pepper.

Place asparagus in a single layer on the lined baking sheet. Roast in the oven for 10-15 minutes.

Devour that deliciousness!
