One of our favorite snacks for these exact kind of evenings, or just anytime, or all the time…are these sweet potato fries!
OH. MY. GOODNESS.
These are like, so good.
The cornstarch and olive oil makes them crisp up on the outside, just like they would if you fried them. The garlic, salt, and pepper add a subtle boost to bring out the savory and sweet flavors in the potatoes.
And the dip.
Its the creamy, spicy, perfect compliment to the sweet potatoes. It is exactly what these fries are begging to be dunked in.
You might actually want to make two batches ;)
SWEET POTATO FRIES WITH GARLIC SRIRACHA DIP
sweet potato fries:
2-3 large sweet potatoes, peeled & sliced into 1/2 inch strips
1 tablespoon cornstarch
1-2 tablespoon olive oil
1 teaspoon garlic powder
salt & pepper
garlic sriracha dip:
1/3 cup light mayo
2 tablespoons greek yogurt
1 teaspoon sriracha
1/2 teaspoon garlic powder
For the sweet potato fries: Preheat the oven to 425. Line a baking sheet with non stick foil.
Rinse sweet potato slices in a colander and shake dry. Then, place cornstarch in a gallon sized ziplock bag and add sweet potatoes. Seal the bag and shake until all the potatoes are covered with a light coating on corn starch.
Transfer potatoes to a mixing bowl and toss gently with olive oil, salt and pepper. Next, spread them out in a single layer on the lined baking sheet. Bake for 15-20 minutes. Then, flip them and bake for 10-15 more minutes.
For the garlic sriracha dip: In a small bowl, mix mayo, greek yogurt, sriracha, and garlic powder.
Devour that deliciousness!
