BBQ Chicken Pizza


Heck yes.

And what better way to kick off your weekend, than with the most delicious pizza in all of existence?

There is no better way. 

Its heaven in a slice.

Its what your taste buds have been waiting for.

Its extraordinary.

Trust me.

The dough is crisp on the outside and soft and chewy on the inside. Its not too thick and not too thin. It has a wonderful garlic and subtle basil flavor that pairs so well with almost any pizza, but especially this one. The tender chicken, smokey bacon, fresh cilantro, crisp red onion, and duo of gooey cheeses are the ultimate compliments to the sweet and tangy barbecue sauce, which is definitely the star here.

If you are a fan of bbq anything, then this is right up your ally. And if you aren’t a fan of bbq, try this pizza and I guarantee you’ll change your tune ;)

makes one large pizza

1 tablespoon active dry yeast

1 1/8 cups warm water

1 1/2 tablespoons honey

1 1/2 tablespoon olive oil, plus more for drizzling

2 1/2 cups all-purpose flour

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon dried basil

3/4 cup barbecue sauce (I used Sweet Baby Ray’s.)

1 cup shredded mozzarella cheese

1 cup shredded monterey jack cheese

1 large chicken breast, cooked & chopped small (I saute my chicken with olive oil, garlic, salt, pepper, paprika, and a little bit of bbq sauce.)

1/2 red onion, thinly sliced

1/2 cup chopped cooked bacon

1/2 cup chopped fresh cilantro

In a large bowl, combine yeast, water, honey and olive oil. Stir with a spoon, then let it rest for 10 minutes, until it gets foamy.

Next, add flour, salt, garlic powder, and dried basil.  Mix with a spoon until the dough comes together, but is still sticky.

Using your hands, knead the dough for a few more minutes then form into a ball.  Drizzle the dough ball with olive oil, turning to coat the entire thing.

Cover the bowl of dough with a towel and put in a warm place to rise for about 1 1/2 hours, until the dough doubles in size.

Preheat oven to 375.  Line a baking sheet or pizza pan with non-stick foil.

After the dough has risen, punch it down and place it on the lined baking sheet or pizza pan.  Using a floured rolling pin or your hands, form the dough into your desired shape. Place the towel back over the dough and let sit in the warm place for 10 more minutes.

Uncover your dough, and spoon the bbq sauce evenly over the dough. Sprinkle with cheeses, chicken, onions, bacon, and cilantro.

Bake the pizza for 20-25 minutes, until crust and cheese are both golden. Cut into slices and devour that deliciousness!

TINA’S TIP: Instead of using the individual packages of yeast, I typically buy a jar of active dry yeast and keep it in my refrigerator. This saves me money, its easier to measure, and allows me to whip up homemade pizza whenever I want!
