Strawberry Goat Cheese Bruschetta

Happy Mother’s Day to all the wonderful and beautiful moms out there! I hope your day yesterday was fabulous, bright, and filled with so much love.

I am beyond blessed to have some amazing women in my life, many of them moms. And I’m especially thankful for my own mother, my grandmother, and my mother in law! These three women are very inspiring to me in so many ways, everyday. Which is why I really, really LOVE celebrating them!

And I’m pretty sure you all can guess my favorite way of celebrating…

With anything delicious, of course ;) There are very few things that give me greater joy than cooking for those I love. I beam at the chance to whip up a scrumptious meal and enjoy it with the company and chatter of my favorite people.

For instance, yesterday morning, we had the pleasure of having my in-laws over for Mother’s Day Brunch!

Ahhh, brunch. You are so perfect. You are you one a kind. You are that meal where anything and everything goes.

Sweet? Salty? Savory? Boozy?

Brunch has it all. And that just makes me giddy!

Strawberry Goat Cheese Bruschetta

And, if there is anything that kick-starts a brunch, its this strawberry and goat cheese bruschetta. (Oh, and mimosas…)

I got the idea for this little appetizer from one of my favorite salads, which has spinach, strawberries, pecans, goat cheese, and balsamic vinaigrette. If you have never tasted strawberries and balsamic together, you need to. Its seriously a heavenly combination. That, plus sweet basil, spicy pepper, and tangy goat cheese all on top of a warm slice of toasted baguette…

Oh, its even better than it sounds.

And bonus, its strawberry season! So, go pick yourself some fresh berries and go to town on this bruschetta.



1 pound strawberries, stems removed and diced

1-2 tablespoons sugar (Use your judgement, depending on how sweet your berries are!)

2 tablespoons balsamic vinegar

1/4 cup chopped fresh basil

1 baguette, sliced

4-6 ounces goat cheese

ground black pepper


Stir strawberries, sugar, balsamic, and basil together in a small bowl. Set aside for 30 minutes or up 2 hours.

When you are ready to serve, preheat the oven to 400. Line a baking sheet with non stick foil and place your baguette slices on it. Bake for 5-7 minutes, until lightly toasted.

Spread about a tablespoon of goat cheese on each piece of toast. Top with strawberry mixture and black pepper.

Devour that deliciousness!
