I’d like you to meet one of my dinner BFFs.
Its super easy, flavorful, and oh so fresh. And it takes 10 minutes start to finish!
This rice is definitely one of my go-to side dishes because it pairs well with so many things! Don’t let Chipotle fool you, friends. Lime & cilantro rice is not just for your mexican cravings, although it IS phenomenal in a burrito ;)
This rice can also accompany fish, chicken, sausage, veggies…anything you feel like whipping up. Actually, one of my favorite things to serve this with is homemade Asian Turkey Meatballs, which I’m excited to share with you soon!
Plus, have you ever smelled fresh cilantro?
Its ridiculous. In the best possible way.
LIME & CILANTRO BROWN RICE
1 cup chicken broth
1 cup quick cooking brown rice
juice of half a lime
1/3 cup chopped fresh cilantro
1/4 teaspoon pepper
In a small pot, bring the chicken broth to a boil. Stir in the brown rice and return to a boil. Cover the pot, and turn stove down to low.
Simmer for 5-7 minutes. Remove the lid and fluff rice with a fork. All of the chicken broth should be absorbed by this point. Turn off stove and stir in lime juice, cilantro, and pepper.
Devour that deliciousness!
