Ready for a vacation? Perhaps to a island? A tropical paradise of sorts?
Um, I know I am!
And that is EXACTLY why I made these cookies.
They are a like the most fabulous, the most sensational island vacation you can imagine. In your mouth.
They are paradise in a bite. They are exotic and delectable, yet comforting.
They are the five star, all-inclusive resort of cookies.
MMM MMM MMMMMMMMMM.
Ya get my drift?
And on top of being the most delicious cookies I have ever made, ever, they have the longest name too! They are a serious little dessert.
The base is a fairly traditional cookie dough, which is already delicious on its own. And to that, you punch and pack it with layers, upon layers of complimenting flavors.
Toasted Coconut. Toasted Macadamia Nuts. White Chocolate. Lime Zest.
You get a sweet, salty, zesty, chewy, nutty, toasty experience in every single bite.
So go ahead, take a little vacation ;)
LIME COCONUT WHITE CHOC MACADAMIA NUT COOKIES
makes 2 1/2 dozen
1 cup coconut
1 cup macadamia nuts
2 cups flour
1/2 teaspoons baking soda
1/2 teaspoon salt
12 tablespoons (1 1/2 sticks) butter, melted
1 cup brown sugar
1/2 cup granulated sugar
1 large egg + 1 egg yolk
2 teaspoons vanilla extract
1 cup white chocolate chips
zest of 2 limes
Preheat oven to 325. Line two baking sheets with non stick foil.
Spread coconut and macadamia nuts in an even layer onto a lined baking sheet. Place in the oven for 3-5 minutes, until lightly browned. Set aside to cool.
In a medium mixing bowl, combine flour, baking soda, and salt. Set aside.
In another medium mixing bowl, stir together butter, brown sugar, and sugar until thoroughly combined. Beat in the egg, yolk, and vanilla. Then, pour in your flour, baking soda and salt combo. Mix until all the way blended. Fold in white chocolate chips, lime zest, toasted coconut, and toasted macadamia nuts.
Roll cookie dough into balls and place on baking sheets. Bake one sheet at a time, each for 9-10 minutes. Cool cookies on baking sheets for five to ten minutes, then transfer to a cooling rack.

TINA’S TIP: I don’t know about you, but I LOVE warm cookies. To re-warm your cookies after they’ve cooled, pop them in the microwave for 5-10 seconds!
