If you are looking for an easy, delicious, crowd pleasing recipe that screams “hello summer!” look no further! These are it.

They take less than an hour, start to finish. They can be made ahead of time. They are perfect for feeding a lot of people, without forks or spoons (or even plates). They are refreshing and sweet all in the same bite. And don’t even get me started on that shortbread crust…

Also, as mentioned not too long ago, summer cookouts are right around the corner (yay!). This dessert is a fantastic addition to your barbecue spread. I will let you in on a little secret, though. I make them all year round. For everything! Even with my Christmas cookies, to warm up the chilly wintertime a little bit.

These little guys are just that divine.

LEMON BARS

crust:

1 cup (2 sticks) butter, melted

2/3 cup powdered sugar + more for sprinkling

1 3/4 cup flour

topping:

1 1/2 cup sugar

4 eggs

1/2 cup lemon juice

1/4 cup flour

1 teaspoon baking powder

For the crust: Preheat oven to 350. Line a 9×13 pan with non stick foil.

In a mixing bowl, stir together melted butter and powdered sugar. Then fold in flour until a dough forms.

Press dough into the foil lined pan, so it is covering the bottom completely. Bake for 15 minutes.

For the topping: While the crust is baking, in a mixing bowl, stir sugar, eggs, and lemon juice together. Add flour and baking soda and mix until combined.

Pour mixture over warm crust. Put back in the oven and bake for 20 minutes more.

Cool completely, sprinkle with powdered sugar, and refrigerate.

Cut into bars and devour that deliciousness!

*Store in the refrigerator for up to 3 days.

TINA’S TIP: Want to turn these casual bars into a fancy schmancy dessert? Serve on a dessert plate with a dollop of homemade whipped cream and top with fresh strawberries or raspberries!
