Something this delicious cannot possibly be this easy! Three packets. One crockpot. I really think I’m still in denial.


If I’m being completely honest with myself, I am much more of an herbivore  dessertavore when it comes to my day to day diet. I could go weeks without meat, and not give it much thought. So, when I met my, meat and potatoes loving husband, I was a bit lost. And when I say lost, I mean browning some ground beef for tacos was the extent of my “we’re having meat for dinner!” comfort zone. You can see where this miiiiight have been a problem.

After having NO luck trying to convince him that brownies and ice cream were prime dinner choices (sigh), I had to step out of the box a little bit. I stumbled upon this recipe and it didn’t seem too scary, so I decided to give it a whirl.

That was one of the best decisions I made. I’m talking, melt in your mouth, tender meat and extremely flavorful veggies. In fact, I’m pretty sure this is the meal that won my man’s stomach over. He used the words “WOW” and “OH MY GOD” a lot, in between shoveling bites into his mouth. WIN.

Little did he know back then, the crockpot actually did all the work. The most difficult part here is chopping the potatoes. Thats it. The rest is just dumping things in the trusty slow cooker and living your life for 8 hours, until its ready to be devoured.

Anybody can do this! This is one of the best meals to try if you are new in the kitchen, or if you’re feeling lazy, or just looking for some amazing comfort food. Plus? Its even better left over.

serves 4-6

2 – 3 pounds red potatoes, rinsed & quartered

1 pound baby carrots

2-5 pound pot roast

1 packet dried ranch dressing mix

1 packet dried italian dressing mix

1 packet dried brown gravy mix

1 1/4 cups water

Place the quartered potatoes and the baby carrots in the bottom of a 5 quart crock pot. Set the roast on top.

Sprinkle ranch dressing, italian dressing, and brown gravy packets over top of the roast.  Then add the water.

Cook on low for 8 hours.

Remove roast for crock pot and slice. Serve with potatoes and carrots. There will be some extra sauce at the bottom of the crock pot! Ladle that on top of the meat and veggies.

Devour that deliciousness!
