PEOPLE! I hope you are ready for your world to be rocked and your life to be changed.
Really, these are self explanatory. But, I’m still going to gush a little because they were just that delicious! And so simple. Strawberries are one of the reasons I know God loves me. They are my all time favorite fruit and I will take them in any form I can get. Jam? Strawberry. Lollipops? Strawberry. Chapstick? Strawberry please! (None of that cherry stuff, I’m not even going to go there. Yet…)
So, you take this amazing fruit and you fill the insides with none other than rich, creamy, vanilla CHEESECAKE. Even better, cheesecake that you don’t have to bake. Then, you add some graham cracker crumbs, and bam. You have yourself the most perfect bite of strawberry cheesecake. The rest is history. Try not to gobble them all up at once, I dare you!
CHEESECAKE STUFFED STRAWBERRIES
1 pound strawberries
8 ounces cream cheese, softened
1 teaspoon vanilla
1/2 cup powdered sugar
2-3 tablespoons graham cracker crumbs
Rinse and dry strawberries, then cut off the stems. Using a pairing knife, hollow out the middle of each strawberry. (I just stuck the pairing knife in the top of each berry and twisted it, creating a hollow middle!) Set aside or refrigerate if you are planning on stuffing them later.
In a medium bowl, beat (with a mixer or by hand) the cream cheese for 1 minute. Add the vanilla and powered sugar. Beat for 2-3 minutes until smooth.
Scoop the cream cheese mixture into a piping bag/bottle or a ziplock bag with the corner snipped off. Fill each strawberry. Place the graham cracker crumbs in a shallow bowl and dip the tops of the strawberries in the crumbs. Refrigerate until ready to serve. These taste best the day they are made.
Devour that deliciousness!
TINA’S TIP: Drizzle melted milk or white chocolate over your strawberries for an extra special treat. Or you could go wild and dip the whole things in chocolate!
